    Barbecue Center

In Lexington, North Carolina, barbecue eaters don’t squirt
sauce, they dip. At the Barbecue Center, as elsewhere
around here, it’s a simple seasoning done right: vinegar-
heavy, with ketchup, sugar, salt, and pepper.

Bar-B-Q Center Makes a Name for Itself in Lexington

Original article published by Our State magazine
Lexington, North Carolina, is to barbecue what Paris,
France, is to baguettes. When I was a kid, I imagined
everyone in Paris walking around with a baguette or two
under their arms, like Little League baseball bats in thin
    paper sacks.
If you have ever encountered a chamber of commerce
brochure for Lexington North Carolina, advertising for the
Barbecue Festival, a Southern Living magazine type
expose on North Carolina barbecue, or a web site
devoted to telling you all about Piedmont pork, you have
undoubtedly seen something approaching the first
    photograph above.

How to Choose a Restaurant Offering "North Carolina Barbecue"

Here’s another silly reason why this circumnavigation
was unlike the three previous ones. On those outings, the
best meal of the trip - the life-affirming, revealing, “this is
better than I was expecting” visit to a legendary old place
    - came halfway through the jaunt, roughly at the furthest
    point from Atlanta.

Lexington, North Carolina, the barbecue capital of the
world, yes world, is home to a lot of barbecue joints.
While the “of the world” designation may be disputed by
other “of the world” barbecue towns, you can’t dispute
    they know barbecue here.
